Hi friends! Thank you for coming back to join me for your Weekly Dose of TLC!

As always, I will be focusing on 3 good things for the week in this single post – everything Teacher-Life-Coach is all about:

So with that, let’s get started!

T – Let’s Read a Latte

The teacher in me loves a good ‘punny’ joke, and my latest bulletin board display is no exception.

As some of you [may] know, I recently changed positions within my school district. After teaching in the classroom for 25 years (5th, 2nd, and 3rd grades), I have transitioned to the Middle School as the Librarian/Media Specialist. Given my LOVE for libraries and bookstores, this was a dream to me, and a really cool way to start a new chapter (pun intended) for the second half of my teaching career. Getting ANOTHER masters degree seems a little rough at my age, but I pride myself in being a lifelong learner so I will make it work.

Anyway, I digress…back to my original thought: A good pun and my bulletin board. I LOVE doing bulletin boards and displays – I always have, and my goal is to change it monthly. I want to encourage students to read and check out the great titles in our library collection, and so I present my latest.

L – Move Over Taco Tuesday

Full disclosure: I am NO gourmet chef, but I am not afraid to try new recipes and what I cook I can cook pretty well…

I was tired of our basic tacos, so I tried this new (to me) dish for the first time last week, and it was REALLY good. Plus, it was super easy – precooked rotisserie chicken makes putting this together a breeze.

Served with black beans and cilantro lime rice. this recipe will quickly become a regular in my rotation.

Chicken Enchilada Bake Recipe

Preheat oven to 350°.

In a large bowl, mix rotisserie chicken with 1 can enchilada sauce. Coat the bottom of a greased 13×9-in. baking dish with enchilada sauce. Place tortillas in the baking dish until the bottom is covered, overlapping as needed.

Layer the following: 1/2 of the chicken (mixed with sauce) then 1/2 cup of cheese, then a thin layer of extra enchilada sauce. Top that layer with tortillas (overlapping as needed). Repeat for a second layer.

Spoon the remaining enchilada sauce onto the top layer of tortillas, then sprinkle the remaining cheese.

LIGHTLY (so it won’t stick) cover the dish with tented foil, and bake for 25 minutes. Take the foil off and bake for an additional 5 minutes until the cheese turns a light golden brown.

C – Get it Done

Let’s finish out our weekly TLC talking about avoidance.

Tomorrow. It’s such a freeing word, and it buys us some time. Yet, tomorrow often pairs well with avoidance, and we all know avoidance is just a temporary fix.

I know we have ALL been here before:
“I’ll get to it tomorrow.”
“Tomorrow I will tackle x, y, z.”
“I will get around to doing this tomorrow.”
But then tomorrow comes and what happens? You guessed it. It gets pushed onto the next tomorrow which turns into the next week, which turns into…well, you get it.

While putting off something may feel good because it keeps your time less filled and more free, it actually has an opposite effect. How so? It’s simple. Just because we SAY we are going to put something off, our brains still know it has to be done. ENTER those nagging little thoughts you just can’t shake. You know, the ones that keep you from focusing on other things.

So, for today, let’s think about tackling something you have been avoiding. Chances are it’s something you don’t enjoy. And now you’re probably thinking, “How is THIS personal wellness and TLC?” Well, when you cross that one thing off your list you make space for more of the good. You are no longer carrying the weight of that task you have been avoiding on your shoulders, and you may even feel a little lighter.

If you need me, I will be putting away my summer clothes because anyone who knows me knows I avoid this EVERY year.
